CaviarEach caviar varies in some way: size, color, style, country of origin; and of course, taste. Malossol means little salt. Sturgeon may come from almost anywhere, and the caviar will be much the same. The processing, however, will vary with the producer. Each portion of one ounce serves one to two persons. You may order your caviar with six of our own condiments or the traditional accompaniments. Both are served with fresh toasted brioche. The classic parings for caviar are fine quality iced Champagnes and icy-cold vodkas. Yukon Gold Potato Blinis (six) - $6.90

Fresh FishPlease refer to our "Kitchen within a Kitchen" menu for tonight's entire offerings. We can charcoal-grill your selection for a robust flavor, sauté it for a delicate texture, or we can prepare it on our "la plancha" for a golden crust and a pure seared flavor. What Kind of Sauce Would You Like With Your Fish? - When choosing a sauce for your selection, you may want to consider how you are having it prepared and what that preparation brings to the dish. You also may want to consider the type of fish, oil content, or tightness of the grain in making your decision. To that end, we offer you our sauces that best complement seafood. One sauce is usually enough for two entrées and of course, they are all made from scra

There is a risk associated with consuming raw oysters. If you have a chronic illness of the liver, stomach or blood or have immune disorders, you are at a greater risk of serious illness from raw oysters, and should eat oysters fully cooked. Trockenbeerenauslese (Bottle)(TRAW-ken-BEERN-ouse-lay-zeh) The sweetest most difficult to make of all the great German dessert wines. The grapes are left on the vines until they look like raisins and then picked grape by grape. The grapes then contain a very high degree of sugar. Some estates only make this wine about once every 10 years.

Eiswein (Bottle)(Ice-wine) The grapes again are left to shrivel on the vines. They must reach the same level of sugar concentration as Beerenauslese. They cannot be picked until after the temperature reaches 20 degrees. The grapes are pressed while frozen, resulting in a very sweet wine as most of the liquid is discarded as ice. Sweet but different from Beerenauslese.

Muscat (Bottle)Among the least known dessert wines of the world are the Muscatel de Setubals (pronounced se TOO bal) of Portugal. Grown and made in sandy soils ?t almost only forcactus, these wines improve with age for a hundred years and more, becoming dark red, mellow, and elegant. They seem to lead dual lives. When young, they have strong acidity and medium fruit, and make nice table wines. But because they are high in alcohol, they take a long time to age, and become sweeter, fruitier, and fuller as they get older. The best (and oldest) are indeed very good.
1969 J.T. Pinto Vasconcello Moscatel de Setubal

White Port (1.5 oz pour)White Ports are made from white grapes only. Can either be dry or slightly sweet.
Ferreira Superior White
| $5.00 |
Ruby Port (1.5 oz pour)Ruby Ports spend the least amount of time in wood. They are filtered just prior to bottling so they do not have to be decanted. The maker strives to make every bottle exactly the same year after year. It is the most popular Port in France because of its fruitiness and easy drinkability.

Vintage Port (1.5 oz pour)Vintage Ports offer the most complex flavors. They are sweet, rich and possess an aftertaste that lingers on your palate. They usually require at least fifteen years to mature. Older vintage ports must be decanted to remove the sediment. Quinta means farm in Portuguese. Single Quinta's come from the best vineyard or farm, from that producer. They are usually made in non-vintage years.

Sherry (1.5 oz pour)Sherries are blends of wines that have been uniquely 'made' in soleras (huge groups of sherry-?lled barrels ranging in age from a couple of years old to two hundred or more years old). Flavors vary with grapes used and company styles. Some dessert sherries are sweet and creamy; some will be medium sweet (or 'sweetdry') like some oloroso sherries. All have some of the sherry character of mellow nuttiness that comes from the soleras.
